My little one doesn't like a broken brain.
In order not to prepare two dishes for lunch, I thought of "hiding" the brain in a dish. Do you think he knew what he ate? No way! :))) He even praised the good taste of the meatballs
- 300 gr pork brain
- 150 gr grated cheese
- an onion
- two cloves of garlic
- a bun / 2 slices of bread
- 100 ml of milk
- 2 eggs
Preparation time: less than 15 minutes
RECIPE PREPARATION Brain and cheese meatballs:
- Put salt water in a bowl to boil.
- When it boils, add the brain washed and cleaned.
- Let it boil for two or three minutes and then drain it in a colander.
- Peel an onion and garlic, chop finely and cook for two minutes in hot oil.
- Bake the soft milk well and then squeeze it in your hand.
- Mix the bun in a bowl with the cheese, brain, drained onion, chopped green parsley, salt, pepper, two eggs. Mix well and let the dish cool for 20 minutes.
- If it is too soft, add another tablespoon or two of breadcrumbs.
- With wet hands, form meatballs from the composition, which you mix well with flour and round.
- Dip them in hot oil and brown them nicely on all sides.
- We served them with baked potatoes and homemade yogurt.
Pork (or beef) brain Before it is cooked, it will be broken into suitable pieces that are put in cold water with salt and 3-4 tablespoons of vinegar (or lemon juice), about 30 minutes (to remove from the blood left any bones that remain in the brain).
In a pot with 1 l of cold water and a pinch of salt, put it pig brain boiling, about 5-10 minutes (not too much, because it can spread in water).
After the time allotted for boiling, the pieces of brain will be drained in a strainer.
In the meantime a dough like pancakes slightly thicker from: eggs, milk, white flour, salt and pepper, mixing with a whisk until completely homogenous.
The oven will preheat to 200 degrees.
In the tray large stove, lined with baking paper, well greased with oil, will put the pieces of brain that were previously given through the prepared dough.
The tray will be immediately placed in the oven, and the pieces of breaded brain will be left until they make a toasting crust (red), about 20-25 minutes.

Bread Meatballs Filled with Cheese and Ham
In a bowl put sliced bread and enough milk to cover it, and after a few minutes, when the bread has already softened, remove from the milk, squeeze well in the morning to remove the remaining milk and crumble.

The formed meatballs are placed in a tray in which before baking paper and a little olive oil were put, and the tray is put in the oven, until they are fried (it takes about 25 minutes at 180 degrees).
Fry them on a kitchen napkin and leave to cool. Serve cold!

Method of preparation:

In a plate, break 2 eggs, salt and pepper to taste, then beat them well with a fork.
In other plates, separately, put flour and breadcrumbs.
When we have everything ready, we take a piece of brain, we put it in flour on both sides.
We put the brain through the egg.
Then through the breadcrumbs.
After that, we fry the brain, on both sides, until it is nicely browned, in a pan with a little hot oil.
After they have browned enough, we take out the brain pieces on a plate in which we put an absorbent napkin, in order to drain the excess oil. We can serve it both hot and cold, with a few slices of lemon or with any garnish. It's a delicious recipe.

50 g cheese
Chop the meat with the carrot, onion through the meat grinder.
Chop the parsley, dill, grate it and add it over the meat, add the rest of the ingredients and mix well.
Cover and set aside for 30 minutes.
With a wet hand, form the meatballs and fry them in an oil bath.
We take them out on an absorbent napkin.

How to make au gratin brain
The brain, it will be washed well, possibly removed from the remaining bone chips, then left in cold water with vinegar for about 15 minutes (to remove blood).
