Peel the apples and put them on the large grater. Then drain the juice and put it on the fire together with the sugar. Add the pudding powder / starch and mix well. Remove from the heat, add the semolina and cinnamon to taste and leave to cool until the dough is ready.
Separate the egg whites from the yolks. The egg whites are mixed with a pinch of salt until they become foam then add the sugar, spoon by spoon, and vanilla sugar and mix until it becomes a hard and shiny meringue. Add the yolks, oil and milk, mixing at low speed until smooth. Add the flour in 2 tranches, mixing well with a whisk (Just enough to incorporate the flour). At the end add the baking powder quenched with lemon juice and lemon peel.
Line a tray (35/25 cm) with baking paper and pour half the amount for the countertop. Put the tray in the preheated oven until the dough hardens slightly (10-12 minutes). Remove from the oven, sprinkle a little semolina on the entire surface of the dough then put the filling and level well. Cover with the remaining half of the countertop and put back in the oven for 40 minutes (until lightly browned on top)
When it is cold, powder it with powdered sugar and serve it with great appetite!
