Pillsbury™ refrigerated classic pizza crust

cup mozzarella cheese (or a mix of your favorite, melty cheeses)

1 1/2

cups broccoli florets and chopped stems, roasted until only slightly crunchy

1

cup cubed, cooked chicken

1

cup sharp cheddar cheese (or a mix of your favorite, melty cheeses)

    On a pizza stone or parchment paper-lined baking sheet, press dough into a 14-by-10-inch rectangle. Sprinkle 1/2 cup mozzarella cheese on middle length of the dough. Top evenly with broccoli, then chicken. Top with cheddar cheese.

    Fold in short sides of dough by 1 inch, then fold in long sides over each other, overlapping in the center. Pinch to seal.

    Carefully flip dough over so the seal is on the bottom (if you’re nervous about this step, skip it: The stromboli just looks prettier with the seal on the bottom, but it’s not necessary).

    Bake stromboli for about 20 minutes, or until crust is a deep golden brown. Let cool 10 minutes before slicing or serving.

  • I’m in love with stromboli and I don’t care who knows it.

    Yes, it was love at first sight with this yummy Mushroom Fontina Stromboli, but when this Cheesy Chicken and Broccoli Stromboli came along my fate was sealed. I was never going stromboli-free in my life again.

    Let me tell you a little bit about stromboli, to help you understand my undying love for it:

    It’s insanely easy to make. Fifteen minutes max is all the time you need to get this dinner (or side dish) in the oven. And 20 minutes later, it’s time to eat.
    It’s delicious. Pizza is one of my favorite food groups, so having a meal wrapped in a crusty, chewy pizza dough is enough to make me weak in the knees.
    It requires few ingredients. Of course, you can put as many things as you want in your stromboli, but a little bit goes a long way, so it’s economical, too.

    I love the combination of warm, melted sharp cheddar and mozzarella cheeses, roasted and slightly crisp broccoli and juicy bites of chicken in this recipe. And though making stromboli once made me fearful – would there be too much crust and not enough filling? Would the filling spill out of the bottom leaving me with a pizza crust skeleton and a lovely mess of cheese on the side? (neither of which has happened, by the way) – I decided to forge ahead anyway.

    And I’m glad I did, because (as you can tell above) my life is changed for the better.

    OK, so stromboli isn’t the be-all, end-all of foods. There are plenty of things I like just as much. But when you’re a busy bee and can still have a delicious and economical meal or side dish on your table in about 30 minutes, well, few things are more lovable than that.

This cheesy 30 Minute Meal is inspired by a vintage recipe that I found in my grandmother&rsquos recipe box. We fell in love with how good it is and how simple it is to make. Perfect for busy weekdays and still great for relaxing weekends.

We can't get enough of this cheesy rice bake stuffed with chicken, broccoli, and cheddar. The brilliance of this dish isn't just the flavor combo&mdashit's the fact that you're making it all in one pan. one pan, people! We're talkin' weeknight dinner GOLD.

Can I make it without heavy cream?

You certainly can, but it will be a very different dish. If you're looking to lighten it up, feel free to use whole milk instead. If dairy doesn't sit well with you, replace the cream with another cup of chicken broth. (And obviously, omit the cheddar!)

Can I use regular bread crumbs instead of Panko?

We always prefer to use Panko, because it is much more light and crisp than classic breadcrumbs. In a pinch, classic bread crumbs (or homemade bread crumbs!) work just fine.

Can I use brown rice instead of white rice?

Yep! Just add an extra 1/2 cup chicken broth, and keep a little extra on the side to add in case the skillet is looking dry.

Can I customize the recipe?

Absolutely! One of our favorite twists is adding a couple strips of cooked, crumbled bacon. Want to make a simpler addition? Finish the casserole with some finely slice scallions or chives!

How do I store leftovers and how long will it keep?

I would cover the baking dish or transfer or it to an airtight container and store in the fridge for 3 to 4 days.


Uncooked Rice…Are You Sure It Will Cook In Time?

Yes! I promise the rice cooks to a nice tender consistency.

In order for this to work, we need Minute® (instant) rice. These foil packs do not work with regular white rice or any other variety of rice it must be instant.

While you’re prepping the rest of the ingredients for these foil packs, soak the instant rice in chicken broth or stock–this softens it and infuses it with loads of flavor. I highly recommend Swanson’s® chicken stock (not sponsored) which I’ve found to have the most robust flavor for a store-bought stock.

QUICK TIP

Use the rest of the instant rice in some other foil pack recipes — this Tin Foil Jambalaya or Salsa Verde Chicken & Rice in foil packs.


How to serve Chicken Patties

As a meal – with crusty bread and a side salad

As a starter to share – pile onto a platter with a dipping sauce

Burgers – Make bigger ones and use for BURGERS!

Chicken Meatballs – Form meatballs instead of patties, and cook per recipe

As for a dipping sauce, ketchup / Aussie tomato sauce, plain yoghurt or sour cream are all great. But if you want to make a bit more of an effort, try the healthier Yogurt Ranch Dipping Sauce provided in the recipe! – Nagi x
